Bahn Mi Chopped Salad
/Inspired by the traditional Vietnamese sandwich, this deconstructed version is transformed into a chopped salad, featuring the classic Vietnamese fixings tossed in a healthified version of the famous srirarcha mayo for a creamy and spicy salad dressing. Get ready, this salad is bursting with flavor and texture in every bite.
Chopped Salad
- 1 cup of greens, chopped
- 1/4 cup carrots, diced
- 1 radish, sliced
- 1/4 cup cucumber, diced
- 1/4 avocado, diced
- 1 scallions, sliced
- 1 nori sheet, crumbled into pieces
- 1/2 Tbsp jalapeno, thinly sliced
- 1/4 cup fresh cilantro, chopped
- sprinkle of toasted sesame seeds
Protein
Incorporate your protein of choice: diced chicken or pork, cubed tofu, chopped hard boiled egg, quinoa, or edamame all work well
Dressing
- 1/4 cup greek yogurt
- 1 lime zest + juice
- 1 tsp sriracha
- 1/2 tsp tamari
- 1/4" ginger, grated
- 1 garlic clove, minced
- 1 tsp rice vinegar
- 1 tsp toasted sesame oil
Whisk together dressing ingredients. Toss salad ingredients and protein together with dressing. Top with toasted sesame seeds, and garnish with cilantro.
