Bahn Mi Chopped Salad

Inspired by the traditional Vietnamese sandwich, this deconstructed version is transformed into a chopped salad, featuring the classic Vietnamese fixings tossed in a healthified version of the famous srirarcha mayo for a creamy and spicy salad dressing.  Get ready, this salad is bursting with flavor and texture in every bite.     

Chopped Salad

  • 1 cup of greens, chopped
  • 1/4 cup carrots, diced
  • 1 radish, sliced
  • 1/4 cup cucumber, diced
  • 1/4 avocado, diced
  • 1 scallions, sliced
  • 1 nori sheet, crumbled into pieces
  • 1/2 Tbsp jalapeno, thinly sliced
  • 1/4 cup fresh cilantro, chopped
  • sprinkle of toasted sesame seeds

Protein 

Incorporate your protein of choice: diced chicken or pork, cubed tofu, chopped hard boiled egg, quinoa, or edamame all work well

Dressing

  • 1/4 cup greek yogurt
  • 1 lime zest + juice
  • 1 tsp sriracha
  • 1/2 tsp tamari
  • 1/4" ginger, grated
  • 1 garlic clove, minced
  • 1 tsp rice vinegar
  • 1 tsp toasted sesame oil

Whisk together dressing ingredients.  Toss salad ingredients and protein together with dressing.  Top with toasted sesame seeds, and garnish with cilantro.
